While I love BBQ it is a little more difficult to do without a full day of preparation or a grill. Luckily all hope is not lost!! Tonight we got inventive with some fantastic ingredients, the stove and a little imagination! Grab your favorite stock pot and get cookin’!
Start with 2-3 pounds of chicken drummies or a combination of drummies and wings. Rinse but leave the skin on. Set aside.
Now let’s talk sauce…
We opted for a few favorites, Grain Belt Premium, KC Masterpiece Original BBQ Sauce, and Bushmills Whiskey. For a little kick you can always turn to fresh peppers!
Place your stock pot on the stove and set the heat to medium. Add approximately 1/2 inch of bbq sauce to the bottom of the pot. Add your fresh drummies–meat down, bone up (should look like a teepee). Once the chicken is situated add one full can of your favorite beer and another layer of bbq sauce over the meat.
If you like your bbq a littler spicier than the average joe, I suggest you dice 2 jalapenos and 1 habanero (if you are really daring use the combination posted in the picture above) and sprinkle this into the pan. Cover and cook for about 10 minutes.
Remove the lid and add 2-3 shots of your favorite whiskey. Replace the lid and cook for 45 minutes to 1 hour– the sauce should bubble but do not boil.
Remove the lid and cook uncovered for another 45 minutes to an hour— LET’S EAT!!!!
I kid you not, the meat was falling off the bone and my house smells incredible. It is not very often that you can achieve such delicious tender bbq in such a short amount of time– I think this technique is a keeper!!! Enjoy!
